Because it is sea salt, it’s a little saltier than the kosher salt I am using in my kitchen every day (and better than what’s on the table at a restaurant). I prefer this, because it takes less to finish a dish when I’m out — just a little sprinkle is all you need. It is characteristically briney and a little tangy, so I love what it adds to simple dishes. The granules are fine for even distribution, but still fairly flakey, so they never overpower a bite (unless I want it to).

I’ve most recently used it to finish big, warm chocolate cookies, to top a big fluffy focaccia with stracciatella and tomato sauce, and to amp up some simple bread and butter.
